In the Skin Potato Co.

In The Skin Potato Co. is the brainchild of Chef Elysia Nichols and is one of our recent additions to Pickering Markets International Food Court. Originally in the printing industry, she decided to trade in paper for a chef’s apron. Graduated from the full time culinary program at Liaison College in 2011, she had come up with an idea for In the Skin Potato Co. while finishing up her studies. She wanted to gain more experience and market research before opening up a shop.

For many years, Elysia and her partner Laura Horton, have been avid fans of The Pickering Markets. They would come here to shop and spend hours at the market walking through the aisles. But their favorite part of the market was our international food court. After Chef Elysia briefly worked at Lucy’s Sea Cove & Oyster Bar Restaurant, she was longing for something a little more than being a line cook. So Elysia packed up her knives and went back to the printing industry to start saving money and continue brainstorming restaurant ideas. She would always come back to what she loved and knows best.

I’m a meat and potatoes gal, and this is meat and potatoes with a gourmet twist

Meat and potatoes was her calling and together, Elysia and Laura Horton decided to bite the bullet and start small and local. Our weekend market was a perfect solution for them, Elysia could stay in the printing industry, while getting her entrepreneurial feet wet and establishing her business.

In the Skin Potato Co. was all about the underrated spud and the classic baked potato. Chef Elysia wanted to combine the baked potato with a potato skin and create a whole meal with it. To properly fuse those together, she first would hollow out the baked potato to create a shell and then would create a mash mixing in herbs and butter. The mash is placed back into the potato shell and then is topped off with massive portions of toppings. None of her ingredients are ever frozen and all potatoes are made to order.

While Elysia works the back of house, her partner, Laura Horton, works the front of house. It’s a great dynamic they have, Laura connects with their customers to make sure every person ordering from them is getting the best customer service. What are their future goals? Elysia would like to expand and eventually bring this concept to the streets, as a food truck!
